Find out which fresh fish is in season and the fish our chef is preparing for you this month.

All our fish is sustainably caught, in season and from British small boats. We buy whatever the fishermen’s catch.

This season’s catch - Summer

  • Pollack

    Flaky and mild white fish. Pollack is very versatile and will do well cured, steamed, breadcrumbed, fried or in papillotte.

  • Plaice

    Sweet, tender, subtle and slightly salty. A mild tasting fish with a delicate texture.

  • Bass

    Seabass are incredibly versatile: delicious raw, steamed, pan-fried or roasted. They have a delicious flavour that is beautifully complimented by light Asian dressings or a simple beurre blanc.

  • Mackerel

    Mackerel is best grilled or cured. Its delicious oily flesh goes beautifully with some sharpness, be it lemon, vinegar or a jazzy chimichurri.

Our in-house chef fillets and seasons the catch of the week, wraps the fish in baking paper and all you have to do is pop it in the oven. The marinades are created using flavours from around the world and include Thai, South Indian, Palestinian, Greek, South Italian, Middle Eastern, Japanese, Peruvian and lots more.

  • South Italian

    August 2025 - week 1

    Fragrant basil, salty capers & olives, delicious sweet tomatoes and a generous drizzle of extra olive oil.

  • Kofta & Garlic Sauce

    August 2025 - week 2

    To spice up your summer with delicious garlic creamy sauce.

  • Chimichurri

    August 2025 - week 3

    Summer fresh herbs in delicious extra virgin olive oil with pickled red onion.

  • Palestinian

    August 2025 - week 4

    Middle east flavours, spiced, fresh & creamy.

  • Love the tasty chef-prep

    Always pleased with the exceptional quality of the seafood and that the fish is different every month. Really enjoy learning to cook seafood and love the tasty organic chef-prepared fish meals. It’s not the cheapest but the fact that it is so fresh, local and sustainable well and truly make up for it. I’m all up for preserving the integrity of our local fishing communities and learning more about the fish on our doorstep.
